Helen'S Egg Stuffed Peppers - cooking recipe
Ingredients

4 medium red bell peppers
1 Tbsp. olive oil
1 tsp. olive oil
1 c. sliced onions
1/2 tsp. minced onions
1/2 tsp. minced garlic
1 c. sliced mushrooms
8 oz. peeled potatoes, boiled and diced
2 eggs, boiled and chopped
1 Tbsp. chopped fresh parsley
1/2 tsp. salt
dash of pepper
Preparation

Cut the top of each pepper.
Remove seeds and membranes; in a 3-quart saucepan.
