Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1/2 c. minced onion
    1 tsp. salt
    1 1/2 c. cracker crumbs
    1 tsp. salt
    dash of pepper
    1 1/4 c. milk
    6 Tbsp. butter
Preparation
    Cut eggplant in cubes.
    Boil with 1 teaspoon salt and onion, covered, for about 5 minutes.
    Drain.
    Make layers of eggplant, 1 teaspoon salt, pepper and crackers.
    Pour in milk; dot with butter.
    Bake at 375\u00b0 for about 45 minutes.
