Tortellini Salad * - cooking recipe

Ingredients
    1 (7 oz.) pkg. frozen cheese tortellini or 3 1/2 oz. (2 c.) dried cheese tortellini
    1 small red sweet pepper, cut into thin bite-sized strips
    3/4 c. broccoli flowerets
    1 small carrot, thinly sliced
    1/3 c. sliced, pitted ripe olives
    3/4 c. mayonnaise
    1/3 c. purchased pesto sauce **
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. olive oil
    1 tsp. vinegar
    1/2 tsp. pepper
    1 clove garlic, minced
    fresh spinach leaves
Preparation
    Cook tortellini according to package directions; drain.
    Rinse with cold water and drain well.
    Microwave or steam broccoli and carrots, slightly, but don't cook through.
    This wasn't in the original recipe, but I think the vegetables absorb more flavor this way.)
    In large mixing bowl, combine cooked tortellini, sweet pepper, broccoli, carrot and olives.
