Chicken Bologna - cooking recipe

Ingredients
    25 lb. fresh meat, cut from bones
    1 lb. Tender Quick
    1 oz. black pepper
    1/2 c. brown sugar
    2 tsp. saltpetre
    3 Tbsp. liquid smoke
Preparation
    Add Tender
    Quick
    to meat.
    Grind twice and let set 24 hours, then add the
    black
    pepper, brown sugar, saltpetre and liquid smoke.
    Grind again and
    mix
    well.
    Put
    in
    cans\tand process 1 hour at 10 pounds pressure.
