Ingredients

1 c. self-rising flour
1 egg
2 Tbsp. sugar
1/2 c. buttermilk
2 Tbsp. oil
Preparation

Separate egg and beat egg white until stiff.
Mix flour, egg yolk, sugar, buttermilk, and oil with beater.
Gently fold in egg white with a spoon.
Spread thin layer of batter in waffle iron and bake.
Makes about 1 serving.
