Flounder In Zucchini Sauce - cooking recipe

Ingredients
    6 small flounder or sole fillets (4 oz. each)
    1 Tbsp. margarine
    1 medium diced onion
    2 small zucchini (about 6 oz. each), cut into 1/2-inch chunks
    1 medium can whole tomatoes, crushed
    1/4 tsp. basil
    1/8 tsp. black pepper
    1/2 tsp. grated lemon peel
Preparation
    Sprinkle fillets lightly with salt.
    Roll up loosely like small jelly rolls.
    In large skillet, heat margarine; cook onion until tender.
    Stir in zucchini, tomatoes, basil and pepper.
    Cook 5 minutes, stirring occasionally.
    Arrange fish rolls in zucchini mixture.
    Cover; cook 8 to 10 minutes until fish flakes.
    Baste occasionally.
    Sprinkle with lemon peel.
    Makes 6 main dish servings.
