Lentil Lasagna(Serves 12) - cooking recipe

Ingredients
    1/2 c. lentils
    1 1/2 c. water
    1/2 c. onion, diced
    2 cloves garlic, minced
    2 tsp. oil
    1 (16 oz.) can tomatoes, diced
    2 (8 oz.) cans tomato sauce
    1/2 tsp. Italian seasoning
    12 oz. part skim Mozzarella cheese, shredded
    9 lasagna noodles
    2 c. fat-free cottage cheese
    1/3 c. Parmesan cheese
Preparation
    Bring washed lentils and water to a boil.
    Reduce heat, cover and simmer for 30 minutes; drain.
    Saute onion and garlic in oil. Add tomatoes, tomato sauce, Italian seasoning and cooked lentils. Grate Mozzarella cheese.
    Cook lasagna noodles according to package directions.
