Ingredients

2 large baking potatoes, cut
1 1/2 tsp. coarse mustard
1 1/2 tsp. Dijon mustard
2 tsp. olive oil
1 clove garlic, minced
1 tsp. fresh herbs of choice (oregano, thyme, tarragon) or 1/2 tsp. dried herbs
1/2 tsp. paprika
1/4 tsp. cayenne (red pepper)
Preparation

Preheat oven to 425\u00b0.
Pat potatoes dry.
Mix together remaining ingredients.
Toss potatoes is mustard sauce, coating well.
Place on a slightly oiled or sprayed baking sheet in a single layer.
Bake for approximately 30 minutes or until brown and crisp.
Serves 4.
