Ingredients

2/3 c. Valencia rice
2 c. water
1 to 3 strips lime peel, remove the white pith
1 cinnamon stick
2 c. milk
1 can sweetened condensed milk (do not use filled dairy blend)
1 can evaporated milk
1/4 c. sugar (if you like it really sweet, add more)
1 tsp. vanilla extract
Preparation

In a large, heavy saucepan, cook the rice with the water, lime peel and cinnamon stick until softened (about 15 minutes).
Pour off excess water.
Add remaining ingredients and cook at low heat, stirring frequently with a wooden spoon, until the pudding thickens (about 45 minutes).
Transfer to a serving dish; garnish with ground cinnamon.
May be served warm or cold.
Serves eight.
