White Boiled Icing - cooking recipe

Ingredients
    1 1/2 c. sugar
    1/3 c. water
    1/4 tsp. cream of tartar
    pinch of salt
    3 egg whites
    1 tsp. vanilla
Preparation
    Combine sugar, water, cream of tartar and salt in a saucepan. Cook, covered, for 3 minutes.
    Remove cover and cook to soft ball stage (242\u00b0) on candy thermometer.
    While syrup is cooking, beat egg whites until stiff (not dry).
    Slowly add hot syrup to egg whites, beating at high speed all the time.
    Beat until it holds straight peaks.
    May add coconut for coconut cake.
