Idaho Crayfish Creole - cooking recipe

Ingredients
    3 doz. crawfish tails
    2 small tomatoes, diced
    1 1/2 c. julienned celery
    1 1/2 c. julienned onion
    1 1/2 c. julienned green pepper
    1/2 bunch chopped green onions
    1 tsp. chopped garlic
    1 1/2 oz. salad oil
    6 oz. tomato puree
    2 oz. water
    salt, white pepper and sugar to taste
    3 whole cloves
    2 large bay leaves
    1 large pinch tarragon
    8 dashes Tabasco sauce
Preparation
    Clean the crawfish by tearing off the tails and removing the meat inside.
    Wash them in cold water and set them aside to drain. Cut the celery, onion, peppers and tomatoes, then set aside.
