Red-Cooked Chicken - cooking recipe

Ingredients
    1 1/2 c. water
    1 c. soy sauce
    8 green onions, bias-sliced into 1 1/2-inch lengths
    1/4 c. dry cooking sherry
    2 Tbsp. brown sugar
    1 clove garlic, minced
    1/2 tsp. aniseed
    1 whole, broiler-fryer chicken
Preparation
    In a large kettle or Dutch oven, combine water, soy sauce, green onions, dry sherry, brown sugar, garlic and aniseed; mix well.
    Place chicken in mixture, cover and bring to a boil. Reduce heat; let simmer for 25 minutes, using tongs to turn chicken over.
    Cover again and let simmer for another 25 to 30 minutes more, basting frequently during the last 10 minutes.
