Ingredients

3 egg yolks
1 c. sugar
2 c. milk
1 c. coconut
3 Tbsp. cornstarch
1 Tbsp. vanilla
2 Tbsp. butter
1/2 c. coconut
Preparation

Divide the eggs. Mix egg yolks and cornstarch; beat thoroughly. Add milk. Put in double boiler; cool until thick. Remove from stove. Mix tablespoon butter and 1/2 cup coconut. Pour into baked pie shell. Beat egg whites until stiff, adding 2 tablespoons sugar to each egg white. Spread on pie crust; sprinkle coconut. Place in oven; bake until brown.
