Tomato Cheese Dip - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 c. onion, chopped
    1 c. green pepper, chopped
    3 cloves garlic, finely minced
    2 c. tomato juice
    1/2 tsp. thyme
    1 bay leaf, finely crushed
    1/2 tsp. salt
    1/2 tsp. Tabasco sauce
    1 3/4 lb. American cheese, grated
Preparation
    Heat oil in pan.
    Add onion, green pepper and garlic; saute slowly until tender.
    Add tomato juice and seasonings.
    Simmer, covered, for 10 to 15 minutes.
    Add grated cheese; stir over very low heat until cheese is melted and blended with tomato juice mixture.
    Keep hot in chafing dish.
    Serve with crackers.
    Makes about 4 cups.
