Sweet Potato Casserole - cooking recipe

1 large can sweet potatoes
1 can apricot halves
1 1/4 c. brown sugar
1 1/2 Tbsp. cornstarch
1 tsp. grated orange peel
1/4 tsp. cinnamon
2 Tbsp. butter (optional)
pecans or walnuts
juice from can of apricots
Preparation

Arrange sweet potatoes in a buttered baking dish.
Add water to apricot juice to make 1 cup, if necessary.
Combine sugar, cornstarch, cinnamon and orange peel.
Add juice; cook until thick.
Pour over sweet potatoes; sprinkle with nuts.
Bake at 350\u00b0 to 375\u00b0 for 30 minutes.
