Shrimp Gumbo - cooking recipe

Ingredients
    1 (1 to 1 1/4 lb.) soup bone
    6 1/2 c. water
    1 Tbsp. salt
    1 bunch green onions
    2 c. sliced okra
    2 Tbsp. bacon drippings
    1 c. peeled chopped tomato
    1 pod hot pepper
    1 large green pepper, chopped
    1 to 2 tsp. dried whole thyme
    1 bay leaf
    1 lb. shrimp, peeled and deveined
    hot cooked rice
Preparation
    Combine soup bone, water and salt in large saucepan.
    Bring to a boil.
    Reduce heat to low and simmer 1 hour.
    Trim tops from green onions.
    Chop bulbs and tops separately and set aside. Saute onion bulbs and okra in hot bacon drippings 10 minutes.
    Add tomato and saute about 5 minutes.
    Add 6 cups soup stock, green onion tops and next 5 ingredients.
    Bring to a boil.
    Cover, reduce heat and simmer 1 1/2 hours.
    Serve over rice.
    Yield: about 2 quarts.
