Lemon Cake Pie - cooking recipe
Ingredients

1 c. sugar
3 egg yolks
1/4 c. melted margarine (stick type)
pinch of salt
1 lemon (juice and rind)
2 rounded Tbsp. flour
1 1/2 c. 1% milk (2% or 4% okay)
3 egg whites, beaten
1 prepared, unbaked pie shell (10-inches; careful, no breaks or nicks in pie crust)
Preparation

Grate rind from clean lemon.
Juice the
lemon;
add to grated rind
and set aside.
Preheat oven to 325\u00b0 (glass pan) or
350\u00b0 (metal
pan).
Blend sugar, egg yolks, margarine and salt thoroughly.
Add
lemon juice and rind and flour;
blend well. Gradually stir in milk.
Beat egg whites to soft peaks. Fold
in egg whites to lemon-milk mixture.
Pour into unbaked pie
crust and bake 1 hour.
Insert table knife;
blade comes out
clean
if done.
Cake
comes
to
top,
lemon custard on bottom.
