Barbacoa(Roasted Beef) - cooking recipe

Ingredients
    roast (rump or boneless sirloin)
    3 cloves garlic
    1 1/2 tsp. peppercorns
    1 tsp. cumin (more if desired)
    2 to 3 Tbsp. chili powder (mild or hot)
    3 to 4 bay leaves
    1/2 to 3/4 c. water
Preparation
    Turn on crock-pot and place meat in.
    Make slices in meat and put cloves of garlic in.
    Sprinkle meat with cumin and chili powder.
    Place bay leaves on top.
    Add water and sprinkle with salt.
    Cook on high for 8 hours or low all day.
    When meat is done and very tender, remove from pot and cool.
    Shred beef with fingers and place back in crock-pot, along with the juices that are already in there.
    Salt to taste.
    Serve with flour or corn tortillas, salsa (pico de gaio), shredded lettuce and tomatoes.
