Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
1/3 c. cornstarch
1 1/2 c. water
3 egg yolks, slightly beaten
3 Tbsp. butter
1/4 c. lemon juice
1 Tbsp. lemon rind, grated
1 baked 9-inch pie crust
Preparation

Combine sugar and cornstarch, stir in water gradually.
Cook over medium heat, stirring constantly until mixture thickens and boils.
Boil one minute.
Slowly stir at least half of the hot mixture into the beaten egg yolks.
Return mixture to saucepan. Boil together one minute longer, stirring constantly.
Remove from heat, continue stirring until smooth.
Add butter, lemon juice and rind.
Pour into baked crust.
Cover with meringue.
Bake until a delicate brown.
