Chinese Fried Rice - cooking recipe

Ingredients
    3 c. cooked rice made from long grain rice
    2 eggs beaten with pinch of salt
    4 oz. fresh shrimp, shelled and cleaned
    1 tsp. soy sauce
    1 tsp. Chinese wine
    dash of pepper
    4 oz. diced ham or Cantonese roast pork
    4 oz. frozen green peas, cooked
    4 dried mushrooms, cooked and diced or 4 oz. fresh mushrooms, washed and diced (optional)
    1 medium size onion, chopped or 1/2 c. minced celery
    2 spring onions, chopped
    4 Tbsp. oil
    1/4 tsp. pepper
    1 tsp. sesame oil
    2 tbsp. dak soy sauce or to taste
Preparation
    Season shrimp with soy sauce, wine and pepper.
    Heat 1 tablespoon oil in
    nonstick pan or wok; scramble eggs.
    Break egg into small pieces and set aside.
    Add 1 tablespoon oil in pan, stir-fry shrimp and spring onion in hot oil for two minutes.
    Then add ham/pork, green peas, mushrooms, onion, celery, sesame oil and pepper.
    Continue to cook over medium heat for 3 to 4 minutes, then set aside.
