Lemon Meringue Coconut Pie - cooking recipe
Ingredients

1/2 c. margarine
juice of 2 lemons
grated rind of 2 lemons
1 c. sugar
2 eggs, beaten
2 egg yolks (save egg whites)
Preparation

Place all ingredients on top of double boiler and stir constantly over hot water, using low heat, until mixture thickens. Chill 1 hour in refrigerator before pouring filling into pie crust.
