Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, chopped and cooked
    1 large onion, chopped
    1 c. Colby cheese
    1 can mushroom soup
    1 to 2 c. crushed Fritos or any corn chips
Preparation
    Peel and
    chop eggplant and cook in boiling water until tender.
    Saute onion in 1/2 stick of oleo.
    Combine all ingredients in
    a
    greased casserole.
    Place cheese on top (optional).
    Bake 30 to 40 minutes at 350\u00b0.
