Eggplant Pie - cooking recipe
Ingredients

1 eggplant, peeled and cut into 1/4-inch slices
3/4 tsp. salt
1/8 tsp. pepper
2 ripe tomatoes, sliced
1 green pepper, seeded and cut in rings
1 small onion, peeled and sliced thin
2 Tbsp. olive oil
1 tsp. minced, peeled garlic
1 tsp. oregano or basil
4 oz. sliced Mozzarella cheese
2 oz. (1/2 c.) freshly grated Parmesan
Preparation

Heat broiler.
Arrange eggplant in one layer on a baking sheet; sprinkle with salt and pepper and broil 6 inches from the heat for 8 minutes or until lightly browned.
Heat oven to 375\u00b0. Line 10-inch pie plate with the eggplant, browned side down. Arrange slices of tomato, pepper and onion over eggplant.
Drizzle with oil and sprinkle with garlic and oregano.
Bake 25 minutes. Arrange Mozzarella slices on top of pie and sprinkle with Parmesan and bake 15 minutes longer.
Cut in wedges to serve.
