Stuffed Peanut Yams - cooking recipe
Ingredients

4 medium size yams
2/3 c. milk
1 tsp. cinnamon
1/4 c. peanut butter
1 tsp. nutmeg
1/3 c. chopped peanuts (garnish)
Preparation

Heat oven to 425\u00b0.
On baking sheet, arrange yams.
Bake for about 1 hour, or until fork-tender.
When cool enough to handle, halve lengthwise and scoop out yams, leaving shell intact.
In large bowl, mash yams.
Add milk, peanut butter, cinnamon and nutmeg.
Beat until fluffy.
Spoon into shells; sprinkle with nuts.
Bake until light brown, about 10 minutes.
Makes 8 servings.
