Caponata From Sicily(Delicious & Healthy) - cooking recipe

Ingredients
    1 large eggplant, cubed
    1 (8 oz.) can tomatoes
    3 cloves garlic, minced
    1 green pepper, chopped
    1 onion, chopped
    1 or 2 tsp. cumin, ground
    1/4 tsp. cayenne
    1 tsp. salt
    1 tsp. sugar
    1/4 c. red wine vinegar
    Olives
Preparation
    Cook cubed eggplant in slight amount of olive oil for about 5 minutes and add the rest of the ingredients. Cover and cook for 20 minutes stirring frequently. Uncover and cook 30 minutes more, or until thick. Serve hot or cold.
