Giardiniera - cooking recipe

Ingredients
    4 ribs celery, diced fine
    1 qt. white vinegar
    2 qt. water
    1/2 c. honey
    1 Tbsp. fennel seed
    1 Tbsp. celery seed
    1/4 c. mustard seed
    1 lb. white onions, chopped
    2 red bell peppers, seeded and diced fine
    6 green bell peppers, seeded and diced fine
    6 hot Italian peppers, seeded and diced fine
    2 tsp. cracked black peppercorns
    1 tsp. flaked red pepper
    6 to 8 cloves garlic, mashed
Preparation
    Place celery in large pot with vinegar, water, honey, fennel seed, celery seed and mustard seed.
    Bring to a boil, stirring until well blended.
    Add onions and continue boiling 5 minutes. Add peppers and peppercorns.
    Boil 5 minutes more.
