Ingredients

2 1/4 c. 10x sugar
2 5/8 c. flour
3/4 c. butter
3 eggs
1 1/2 tsp. vanilla
salt
3 tsp. baking powder
3/4 c. milk and coconut juice
1 coconut, grated
Preparation

Cream butter and sugar gradually.
Add eggs and beat well. Stir in vanilla.
Add dry ingredients, a little at a time.
Pour in milk slowly.
Fold in coconut.
Bake at 350\u00b0 for 25 to 30 minutes.
Frost with butter icing and cover with coconut.
