Fresh Plum Pie - cooking recipe
Ingredients

1 1/2 lb. ripe plums
1 1/2 c. sugar
1/3 c. cornstarch
1/4 tsp. salt
1/2 tsp. ground ginger
1 Tbsp. margarine
1 tsp. grated orange rind
1 Tbsp. orange juice
pastry for 2-crust 9-inch pie
Preparation

Quarter and pit plums.
Should have 1-quart.
In a large saucepan, thoroughly stir together sugar, cornstarch, salt and ginger; add plums, margarine, orange rind and orange juice. Stirring constantly over medium heat, cook until sugar dissolves and mixture comes to a boil.
Boil for 3 minutes.
Cool slightly. Pour filling into pastry lined pie plate.
Top with remaining pastry. Seal edges.
Bake in 425\u00b0 oven for 10 minutes.
Reduce heat to 350\u00b0 and continue baking for 40 minutes.
Cool.
