Vegetable Quiche - cooking recipe

Ingredients
    1 c. cooked brown rice
    1 c. cooked no-yolk noodles
    3/4 c. egg substitute
    3/4 c. shredded low-fat Mozzarella cheese, divided
    1 1/2 c. chopped fresh broccoli
    3/4 c. sliced fresh mushrooms
    1/4 c. skim milk
    1 Tbsp. canola oil
    1 unbaked crust
Preparation
    In bowl, combine rice, cooked noodles, 1/4 cup egg substitute and half the cheese.
    Mix well.
    Pat into bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray; set aside.
    In another bowl, combine broccoli, mushrooms, milk, oil and remaining egg substitute.
    Pour into crust.
