Ingredients

1 c. sifted flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1 c. sugar
3/4 c. corn oil
2 eggs
1 1/2 c. shredded carrots
3/4 c. flaked coconut
Preparation

Grease 13 x 9 x 2-inch baking pan.
Sift flour, baking soda, cinnamon and salt.
Mix together sugar and oil.
Add eggs, one at a time, beating well after each addition.
Add flour mixture, alternating with carrots, about 1/3 at a time.
Stir in coconut. Pour into cake pan.
Bake at 350\u00b0 for 25 to 30 minutes.
Cool 10 minutes.
Frost with cream cheese frosting.
