Ingredients

1 lb. watermelon rind
2 c. sugar
1/2 lemon, sliced
1 c. water
1 c. vinegar
1 stick cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
Preparation

Peel rind and cut in medium thin slices.
Soak overnight in a weak brine made of 2 tablespoons salt and 1 quart of water. Drain and cook rind in fresh water until tender.
Drain.
Combine remaining ingredients and boil 5 minutes.
Add rind and cook until clear.
Pack in hot, sterile jars, fill with syrup; seal.
