Corn Casserole - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 stick margarine
    1/4 c. chopped green pepper or green chilies
    1 (16 oz.) can whole kernel corn
    1 (16 oz.) can creamed corn
    2 eggs
    1 pkg. Jiffy corn muffin mix
    2 Tbsp. chopped pimento (optional)
    1 c. sour cream
    2 c. grated Cheddar cheese
Preparation
    Saute the onion and green pepper or green chilies in the margarine.
    Mix together the remaining ingredients, except the sour cream and cheese.
    In a greased 9 x 13-inch pan, layer the corn mixture, sauteed onion mixture, sour cream (or yogurt) and 2 cups cheese. Bake at 400\u00b0 for 30 minutes.
    Serves 6.
