Chicken Enchiladas Ole - cooking recipe
Ingredients

2 1/2 c. chopped cooked chicken
1 (16 oz.) sour cream
1 1/2 c. shredded Cheddar cheese
1/3 c. chopped green onion
12 tortillas
oil
1 1/2 c. salsa
Preparation

Combine chicken, 1 cup sour cream, 3/4 cup cheese and onion; mix well.
Dip tortillas in hot oil to soften; drain.
Top each tortilla with 1/4 cup chicken mixture.
Roll up tightly.
Place seam side down in a 9 x 13-inch baking dish.
Top with salsa.
Bake at 375\u00b0 for 25 minutes.
As soon as they come from the oven, sprinkle with remaining Cheddar cheese.
Serve with remaining sour cream.
Makes 6 servings.
Great way to use up leftover chicken.
