Peanut Brittle(Microwave) - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. light corn syrup
    1 c. raw unsalted peanuts
    1 tsp. baking soda
    1/8 tsp. salt
    1 tsp. butter
    1 tsp. vanilla
Preparation
    Combine sugar, corn syrup, peanuts and salt in an 8-cup measure.
    Microwave, uncovered, on High for 7 to 8 minutes, stirring well after 4 minutes.
    Add butter and vanilla and blend well.
    Microwave on High for 1 minute.
    Peanuts will be lightly browned and syrup very hot.
    Add baking soda and stir until light and foamy.
    Pour mixture onto lightly greased cookie sheet.
    When brittle is cool, break into small pieces and store in airtight container.
    Makes 16 servings.
    Per serving:
    133 cal, 2 gm protein, 5 gm fat, 2 gm carbohydrate, 0.6 cholesterol and 79 mg sodium.
