1/2 lb. shrimp, peeled and deveined
2 medium red onions, thinly sliced
2 medium green peppers, thinly sliced
2 jalapeno peppers, minced (remove seeds to reduce heat)
16 oz. canned tomato wedges, drained
1 medium zucchini, coarsely chopped
4 medium garlic cloves, minced
1 tsp. thyme, ground
1 1/2 tsp. paprika
9 oz. uncooked arborio rice
1 1/4 c. chicken broth
1/4 c. sherry
