Sweet Potato Surprise Cake - cooking recipe

Ingredients
    1 1/2 c. cooking oil
    2 c. sugar
    4 eggs, separated
    4 Tbsp. hot water
    2 1/2 c. self-rising flour
    3 tsp. baking powder
    1/4 tsp. salt
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1 1/2 c. grated raw sweet potatoes
    1 c. chopped nuts
    1 Tbsp. vanilla
Preparation
    Beat egg whites until stiff and set aside.
    Combine oil and sugar and beat until smooth.
    Add egg yolks and beat well.
    Add hot water and dry ingredients (which have been sifted together).
    Beat well.
    Stir in potatoes, nuts and vanilla and beat well.
    Fold egg whites into batter.
    Bake in three 8-inch layer pans at 350\u00b0 for about 25 to 30 minutes.
    Let cool and frost.
