Irish Halloween Supper - cooking recipe

Ingredients
    8 medium potatoes, peeled
    small bunch of scallions
    1/2 c. milk
    salt and pepper
    1 knob butter per person
Preparation
    Cook potatoes and pass through food mill.
    Chop scallions finely, both green and white parts.
    Cook 5 minutes in milk.
    Beat this mixture into mashed potatoes until smooth and fluffy.
    Season to taste and serve a large mound on each plate.
    Place a knob of butter on top of each mound.
