Scallopine With Peppers - cooking recipe

Ingredients
    2 chicken breasts, boned and thinly sliced
    1/2 tsp. salt
    1/4 tsp. pepper
    flour (for dredging)
    1 large green and 1 large red pepper
    3 Tbsp. + oil
    1 clove garlic
    1/4 c. red wine
    1 Tbsp. red wine vinegar
Preparation
    Dredge chicken in flour.
    Cut peppers in slices.
    Saute chicken in 2 tablespoons of oil until golden (5 minutes each side).
    Remove from pan and keep warm.
    Add 1 tablespoon oil; add peppers and saute until tender.
    Add crushed garlic and saute 1 minute.
    Stir in wine and vinegar, stirring to coat.
    Spoon over chicken.
    Serves 4.
