Rice Salad - cooking recipe

Ingredients
    2 1/2 c. brown rice
    1 Tbsp. ginger
    2 carrots, grated
    1 c. low-fat yogurt
    1/4 tsp. cinnamon
    1/2 c. seedless raisins
Preparation
    Combine all ingredients in a bowl and mix well.
    Refrigerate overnight.
    Serve on lettuce leaves.
