Skillet Fish With Vegetables - cooking recipe

Ingredients
    2 Tbsp. corn oil
    1 c. coarsely chopped onion
    1 clove garlic, minced
    3/4 lb. zucchini, cubed (3 c.)
    2 medium tomatoes, chopped
    1 green pepper, cut in 1-inch strips
    1 tsp. basil leaves
    1/4 tsp. black pepper
    1 lb. fish fillets (flounder, haddock, sole or turbot)
    3 Tbsp. lemon juice
Preparation
    In a large skillet, heat corn oil over medium-high heat.
    Add onion and garlic.
    Stir frequently; cook 1 to 2 minutes.
    Add zucchini, tomatoes, green pepper, basil and black pepper, stirring occasionally.
    Cook 10 minutes.
