Baked Potato Pudding - cooking recipe

Ingredients
    6 slices bacon, diced
    1 minced onion
    4 potatoes, peeled and grated
    salt and pepper to taste
    4 eggs, beaten
    1 c. milk
    1 Tbsp. minced parsley
Preparation
    Saute bacon and onion until bacon is crisp.
    Mix potatoes with all other ingredients and pour in a 1 1/2-quart baking dish.
    Bake at 375\u00b0 for 1 hour or until the top is browned.
