Scalloped Eggplant(Tastes Like Scalloped Oysters) - cooking recipe
Ingredients

1 eggplant
1 to 2 eggs, beaten lightly
1 c. milk
1/2 stick margarine
1/8 tsp. black pepper
12 saltine crackers
1 small can mushrooms and/or some mushroom soup (optional)
Preparation

Cut eggplant into 1 inch cubes; soak 1 hour in salted water. Drain and mush with potato masher.
Combine eggs, milk, margarine and pepper; add to \"mushed\" eggplant.
In a greased casserole, place a layer of eggplant, a layer of crumbled crackers, a layer of eggplant, layer of crackers, etc, ending with crackers on top. Bake at 350\u00b0 until lightly browned.
May add 1 small can of mushrooms or soup; if desired.
