Raw Potato Dumplings - cooking recipe
Ingredients

1/2 c. grated raw potatoes
3 1/2 c. boiled riced potatoes, cooked
2 Tbsp. fat or butter
1 Tbsp. grated onion (minced)
2 eggs, lightly beaten
1 tsp. salt
3/4 c. flour
Preparation

Drain raw potatoes well.
Add oil.
Saute onion.
Add raw potatoes.
Cook until forms a paste.
Cool.
Add riced potatoes, salt, eggs and flour.
Stir until smooth.
Shape into long thick roll.
Cut pieces to make dumplings.
Cook in rapidly boiling water until they rise to top.
Simmer a few minutes longer until cooked through to center.
