Low-Fat Scalloped Potatoes - cooking recipe
Ingredients

2 Tbsp. vegetable oil
1/4 c. flour
2 1/2 c. skim milk
1 (4 oz.) jar pimentos
salt and pepper to taste
1 large chopped onion
3/4 c. (3 oz.) shredded low-fat cheese
2 lb. potatoes, sliced
Preparation

Put oil in pan, add flour and cook 30 seconds.
Whisk in milk until no lumps.
Bring to boil, reduce heat and cook until thick; remove.
Add pimentos.
Layer with onions, potatoes and cheese in 2 1/2-quart sprayed dish.
Bake at 375\u00b0 for about 1 hour and 10 minutes.
