Pepper-Onion Relish - cooking recipe
Ingredients

2 qt. chopped red peppers (about 16 medium)
2 qt. chopped green peppers (about 16 medium)
1 1/2 c. chopped onion
2 tsp. mixed pickling spices
1 hot pepper
1 1/2 c. vinegar
3/4 c. sugar
2 tsp. salt (not iodized)
Preparation

Combine vegetables and cover with boiling water.
Let stand 5 minutes. Drain. Cover again with boiling water and let stand 10 minutes. Drain. Tie spices and hot pepper in a cheesecloth bag. Combine vinegar, sugar and salt. Add spice bag and simmer 15 minutes. Add vegetables and simmer 10 minutes. Remove spice bag. Bring relish to boiling point.
Pour boiling hot relish into jars.
