Blueberry Muffins - cooking recipe
Ingredients

2 c. flour
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 tsp. grated lemon or orange peel
3/4 c. milk
1/3 c. oil
1 egg, beaten
1 c. fresh or frozen blueberries
Preparation

Preheat oven to 400\u00b0.
Grease bottoms only of 12 muffin cups or line with paper baking cups.
In medium bowl, combine flour, sugar, baking powder, salt, lemon or orange peel.
Mix well.
In small bowl, combine milk, oil and egg; blend well.
Add liquids to dry ingredients all at once.
Stir just until dry ingredients are moistened.
Fold in blueberries.
Fill prepared muffin cups 2/3 full.
Bake at 400\u00b0 for 18 to 20 minutes or until lightly brown. Cool 1 minute before removing from pan.
Serve warm.
Makes 12 muffins.
