Oysters Of The Bayou - cooking recipe

Ingredients
    1/2 c. butter or margarine
    1 large onion, finely chopped
    3 cloves, garlic, finely chopped
    1 qt. oysters, chopped into bite-size pieces
    1 c. oyster liquid
    1/2 c. evaporated milk
    1/2 tsp. thyme
    1/2 tsp. oregano
    2 Tbsp. parsley
    hot sauce, salt and pepper to taste
    1 c. Italian bread crumbs
    grated Parmesan cheese
Preparation
    Saute onion and garlic in butter; add oysters.
    When edges curl, add oyster liquid and milk; stir; add seasonings.
    Fold in bread crumbs.
    Place in a 2-quart casserole or individual dishes; sprinkle lightly with bread crumbs and Parmesan cheese.
    Bake at 350\u00b0 for 15 to 20 minutes.
    Serve hot.
    This dish may also be served in large pastry shells.
    Yield:
    8 servings.
