Oyster Soup - cooking recipe
Ingredients

1/2 lb. spaghetti, broken into small pieces
1 qt. oysters with liquid
2 Tbsp. oil
salt pork, cut into small pieces (about 4 or 5)
2 large onions, cut up
4 cloves garlic, finely chopped
1 large can tomato sauce
1 can tomato paste
2 Tbsp. green onions
2 Tbsp. parsley
salt and pepper
2 qt. water
Preparation

Brown salt pork until crisp; add onions and garlic.
Cook until nice and browned.
Add tomato sauce and paste.
Stir well. Cover and let simmer on low fire for about 1 hour, stirring several times.
Add oysters, liquid and about 2 quarts water and bring to a boil on high heat.
Lower to medium heat and cook for about 30 minutes.
Add spaghetti.
Return to a boil; add the green onions and parsley.
Continue to cook until spaghetti is tender (about 15 minutes longer).
Add salt and pepper to taste.
This soup is better if cooked early, then reheated just before serving, allowing the flavors to blend together.
