Baked Ziti With Veggies - cooking recipe

Ingredients
    8 oz. ribbed ziti or other tubed shaped pasta
    1 Tbsp. olive oil
    2 large carrots, peeled and sliced
    2 c. broccoli florets
    1 large green pepper, diced
    4 oz. mushrooms, cut in half
    1 garlic clove, crushed
    1 tsp. salt
    1 tsp. black pepper
    1 (28 oz.) can tomatoes
    1 c. shredded Mozzarella cheese
    1/4 c. grated Parmesan cheese
Preparation
    Prepare pasta as label directs; drain.
    In 12-inch skillet over medium heat, in hot oil.
    Cook carrots, broccoli and green pepper 5 minutes.
    Add mushrooms, garlic, salt and pepper.
    Cook 5 minutes longer or until veggies are tender, stirring occasionally. Add tomatoes and break up with fork.
    Preheat oven to 375\u00b0. Grease 2-quart casserole.
    In large bowl, toss cooked veggies with pasta, Mozzarella and grated Parmesan cheese.
    Spoon into prepared casserole.
    Bake 30 minutes or until mixture is hot and bubbly.
