Chicken, Pork And Shrimp En Adobo - cooking recipe
Ingredients

1 whole chicken breast, skinned, boned and cut in 2-inch cubes
1/2 lb. fillet of pork, cut in 2-inch cubes
5 Tbsp. cider vinegar
1 clove garlic, peeled, split and crushed
2 bay leaves
1 tsp. salt
chicken broth
3 Tbsp. butter
1/2 lb. raw shrimp, peeled and deveined
2 or 3 Tbsp. Madeira wine
salt and pepper to taste
3 c. hot, cooked rice
Preparation

Place chicken and pork cubes in a non-metal bowl.
Add vinegar, garlic, bay leaves and salt.
Let stand 10 minutes. Transfer to wok.
Pour in enough chicken broth to cover meat. Cover and simmer until all liquid has evaporated.
Add butter. When melted, add shrimp and wine.
Stir-fry until shrimp are firm and pink.
Season to taste with salt and pepper.
Remove bay leaves.
Serve over rice.
Makes 6 servings.
